2017 SIMONNET-FEBVRE SAINT-BRIS SAUVIGNON BLANC
Maison Simonnet-Febvre was established in 1840 and it is a traditional Chablis winery, one of the oldest in Burgundy. Today Simonnet-Febvre produces a wide range of wines to express the different terroirs of their vineyards.

The estate was purchased in 2003 by Maison Louis Latour. It is currently led by Paul Espitalié, who runs the estate as a separate enterprise with its own house style.

The location of the Saint-Bris vineyards allows the Sauvignon grapes to fully express their range of aromas and the minerality of the soils. They are often planted in colder areas in order to enable a slow ripening and therefore the best expression of the vineyards’ strong character.

This 100% Sauvignon Blanc wine is produced from vines with an average age of 25 years. It is fermented in stainless steel tanks at temperatures between 16 and 20 degrees Celsius. After full malolactic fermentation is completed, the wine is aged in stainless steel for 6-8 months.

This wine is of golden color with light green highlights. Its powerful nose is characterized by aromas of exotic fruits, freshly cut grass and citrus fruits such as grapefruit. This wine has a good structure with an aromatic fruit and vegetable persistence.

This is a wine that works well as an aperitif or with fruit-based deserts.
