Groundbreaking coffee spirit created by Santa Fe locals

Ever had a coffee spirit? Not a sweet liqueur, but a clear, 80 proof coffee spirit? Naw, we hadn’t either.

Wayward Sons Coffee Claro Que Sim is the first commercially produced distilled coffee spirit made and it just debuted this month. Wayward Sons, co-founded by Santa Fe locals, Tom Wolinski and Byron Rudolf, is Santa Fe’s newest and most-fascinating micro-distillery.

To make the flagship Claro Que Sim spirit, organic Arabica coffee beans (sourced from Taos Roasters) are cold-brewed and fermented into a “coffee wine.” The coffee wine is then run through a column still, creating a clear, dry spirit, which is subsequently aged in South American rum barrels and bottled at 80 proof (40% ABV).

Wayward Sons also produces a cocktail-friendly spirit — with the Clara Que Sim base distilled with herbs, botanicals, spices and fruits.
